Tortellini in Broth: An Authentic Taste from the Past.

Ingredients (4 portions):
- 400 g of Tortellini from Pastificio Bolognese
- 2 liters of meat broth
- 1 medium carrot
- 1 medium onion
- 2 bay leaves
- 3-4 sprigs of parsley
- Salt and pepper
- Grated parmesan
Start by making the meat or vegetable broth. If you are using ready-made broth, heat the broth in a large pot and continue with the next step. If you want to prepare the broth at home, you can do it in advance, following a basic meat-based recipe. Remember to remove the foam that forms on the surface to make the broth clear.
Once the broth is hot, add the carrot, celery and onion slices to the pot. Also add the bay leaves and parsley. Allow the broth to simmer over medium-low heat for about 15 to 20 minutes, or until the vegetables are soft and the broth has developed a rich flavor.
Meanwhile, bring a separate pan of lightly salted water to the boil and cook the Pastificio Bolognese tortellini.
Drain the tortellini from the cooking water.
To serve, fill the plate with the cooked tortellini and pour over the hot broth and vegetables.
Sprinkle a little grated Parmigiano Reggiano over the top of each bowl.
