Ricetta Tortellini al ragù Bolognese

In a terracotta pot, melt the bacon with the olive oil. Add the chopped vegetables and let them soften. Add the minced meat and brown until golden brown. Pour the wine, let it evaporate, then add the tomato puree. Cook over low heat for 2 hours, adding the milk towards the end of cooking. The ragù will be ready when it is thickened.

While the ragù is cooking, bring a pan of salted water to the boil and cook the Tortellini from Pastificio Bolognese. Drain them and add them to the ragù in the pan. Stir gently to combine the flavors.
